Butter Bean Dip

Devised as a nut-free alternative to hummus, this healthy dip can be whizzed up in minutes from store-cupboard ingredients. It’s a great weaning food too, just leave out the salt.

Ingredients
1 tin butter beans, drained
1 small clove garlic, crushed – go with half first, it’s easy to make it too strong
2 tablespoons lemon juice
black pepper and a pinch of salt
1 scant tablespoon creme fraiche
1 tablespoon olive oil
1 teaspoon cumin
1 teaspoon paprika
Small bunch parsley or coriander – around half a 25g pack
5 dried apricots (optional but tasty)

Alternative flavour profile: swap out the cumin and paprika for fresh basil or tarragon.

Method
You guessed it: whizz everything together and then check and adjust the flavours as needed. Chill for an hour to firm up a little, then serve.
